High Fibre No sugar muffins

Ingredients:Sugar free High fibre muffins

1 egg
1/4 cup coconut oil
1/4 cup of honey
3/4 cup wholemeal self raising flour
1/4 cup desiccated coconut
1/3cup of low fat milk
1/3 cup of sultanas

 

Method:

1. Whisk oil, egg and honey together gently until honey is dissolved into the mixture.
2. Stir in the wholemeal flour, coconut and milk, then add the sultanas
3. Grease a mini muffin tin lightly with coconut oil and then fill each case 3/4 full of the mixture you just mixed
4. Bake in the oven for 15 minutes or until risen and golden
