Broccoli rissoles
These are great to include some vegetables for fussy eaters. Nearly all we taste tasted the rissoles with didn't know the rissoles were made mainly from vegetables. Great way to increase your healthy choice recipes.
Ingredients;
200 grams of ground boiled Broccoli1 x small Onion finely chopped1 x egg2 x tablespoons of Oatmeal3 x tablespoons of breadcrumbs1/2 cup of cottage cheese or light mayonnaise1 x pinch of salt1 x tablespoon of olive oil1 x tablespoon of parmesan cheese1 x cup of Mozzarella cheeseMethod;
Pre-heat oven to 180 degrees Boil the broccoli for 5 minutesDrain the broccoliPut broccoli in blenderMix all ingredients in a large bowlForm mixture into rissolesPlace on wax paper on a baking trayBake in the oven for 15 minutesTurn rissoles over and cook another 15 minutesDistribute the mozzarella cheese evenly over the top of the rissolesCook until cheese meltsLet us know if the kids knew what they were eating?
