Broccoli rissoles

These are great to include some vegetables for fussy eaters.  Nearly all we taste tasted the rissoles with didn't know the rissoles were made mainly from vegetables. Great way to increase your healthy choice recipes. 

Ingredients;
200 grams of ground boiled Broccoli
1 x small Onion finely chopped
1 x egg
2 x tablespoons of Oatmeal
3 x tablespoons of breadcrumbs
1/2 cup of cottage cheese or light mayonnaise
1 x pinch of salt
1 x tablespoon of olive oil
1 x tablespoon of parmesan cheese
1 x cup of Mozzarella cheese
Method; 
Pre-heat oven to 180 degrees 
Boil the broccoli for 5 minutes
Drain the broccoli
Put broccoli in blender
Mix all ingredients in a large bowl
Form mixture into rissoles
Place on wax paper on a baking tray
Bake in the oven for 15 minutes
Turn rissoles over and cook another 15 minutes
Distribute the mozzarella cheese evenly over the top of the rissoles
Cook until cheese melts
