Packed full of goodness
Ingredients;
1 Cup of almonds or (peanuts, walnuts, pistachios, cashews)
1/2 Cup of linseed1 Cup quinoa or oat flakes2 Tbs cacao powder1/2 Cup coconut sugar or honey1 Tbs baking powder2 Eggs2 Tbs coconut oil1 Tbs vanilla essence80g 70% chocolate or sultanas
Method;
Step 1 Preheat the oven to 180CStep 2 Line 2 trays with non stick baking paperStep 3 In a food processor blend the almond or peanut or walnut or pistachios or cashewsStep 4 Add quinoa or oat flakes, cacao powder, coconut sugar or honey and baking powder; set aside.Step 5 Beat the eggs add them with the oil and the vanilla essence Step 6 Mix ingredients from step 4 and 5Step 7 Chop the chocolate or sultana and add at the mixture.Step 8 Knead the mixture with your hands into a ball, place on the prepared non stick baking paper, space about 2cm apart and use the back of a fork to press a little flattening slightly.Step 9 Bake for 10-15 minutes, until lightly coloured. Cool a little then transfer to a wire rack to cool completely.Makes around 40 biscuits.
